Mutton
Mutton is meat from a two to three year old sheep. For centuries, until wartime shortages led to lamb
becoming the preferred sheep meat (because it could be produced after only a year or less),
mutton was the
staple meat of the British household.
Superior in both flavour and texture to lamb, mutton is considered by some
to be the equal of beef.
Mutton must also be hung (matured) for longer than lamb, for two to three weeks as against a week for lamb, which further mitigates
against it in the modern fast food world.
Mutton should be cooked slowly - baked not roasted. This is ideal for the owners of Agas and similar cookers where a leg or shoulder of mutton wrapped in foil and cooked for up to three hours in a slow oven (150 degrees centigrade) is the finest and tenderest meat imaginable.
